Pickled-Herring Salad

There are Polish herring dishes, served in Sour cream and chopped onions, with hot boiled potatoes. There are Dutch herring dishes, and there are myriad northern European variations: all make a regular appearance in daily life, and really fail to please. This recipe makes a good, quick and satisfying dish.

10 to 18 Fillet Pickled herrings
3 Crisp apples
1 medium onion peeled
1 small stick of celery
1 tbsp of chopped chervil
1 tbsp of chopped tarragon
1 tbsp of chopped chives
200 ml thick home—made mayonnaise
Sea salt and freshly ground pepper.

Finely Chop the onion, celery and apple, and in a large bowl mix them with chopped herbs. Stir in the Mayonnaise, and season as necessary. Cut each herring fillet into two or three pieces, and stir them into the dressing. Put in the fridge for at least one hour before serving, It is a good idea to serve some Wine or Schnapps with dish, as well as a fine beetroot salad dressed in olive oil, red-wine vinegar , horseradish, sugar, salt and pepper. Needless to say a good Rye or soda bread warm with butter is essential.
